Arctic cooking

Magnus Nilsson owns the restaurant Fäviken Magasinet. It's situated in northern Sweden and he only uses locally harvested products, and this results in a very special menu. The menu changes with the seasons and the available ingredients, but to give you a taste here is a dish that was on the menu: 'lightly salted wild trout roe in a warm crust of dried pigs blood'.
